Chocolate Peanut Butter Bliss Balls with Strawberries

Today is the birthday of my dearest uncle. There's no way for me to possibly describe such an incredible person or how much he means to me, so instead I offer a recipe that is filled with love and sweetness just like him. Chocolate Peanut Butter Bliss Balls with Strawberries

If you've read the last post you already know how to make bliss balls with filling, so there's no need to explain that one. Just make the filling with peanut butter instead of cashew butter and add STRAWBERRIES.

DSCN3816Bliss Balls:

Cacao or cacao powder

1 cup dates

1 Tbsp coconut oil

1/8 tsp vanilla powder or extract

pinch of cinnamon

pinch of salt

2Tbs maple syrup or sweetener of choice (optional)

1/2 cup peanut butter

3 Tbsp maple syrup

2-3 Tbsp fresh strawberries (chopped)

2 Tbsp coconut oil

1/8 tsp vanilla powder or extract

pinch of salt

pinch of nutmeg (freshly ground is best!)

To make bliss balls: chop the cacao into small chunks or grind into a fine powder in a food processor. Melt the cacao in a double boiler or saucepan with coconut oil. Heat slowly on low heat.

Add dates to the food processor and grind until it has become a date paste (or date blob). Transfer to a bowl and add in the cacao mixture along with the salt, cinnamon and vanilla. Taste it. Glorious. Amazing. The dates are naturally quite sweet, but if you want some extra sweetness add a bit of maple syrup.

To make the filling: melt the coconut oil in a saucepan or double boiler on low heat. Combine the peanut butter, melted coconut oil, maple syrup, chopped strawberries, salt, vanilla and nutmeg in a bowl and place in the freezer. Follow the steps for the Chocolate Lavender Bliss Balls with Cashew Cream Filling recipe to add the filling to the bliss balls.

Garnish with fresh strawberries! (Or in this case, strawberry hearts)

Happy Birthday, Baggins - I love you more than chocolate, peanut butter and strawberries combined! <3
